HARDLY  TRADITIONAL








    2 cups of fresh dandelion leaves, chopped coarsely
    4-6 slices well fried bacon, chopped
    2 hard boiled eggs, crumbled
    1 med yellow onion chopped finely
    1 stick of butter
    1/2 cup of cream preferably (milk will do, but not as well)
    1 tablespoon flour
    2 tablespoons granulated sugar
    1/4 cup cider vinegar preferably (clear will do also)
    1 egg, beaten
    salt & pepper to taste

Toss dandelions, onion, and bacon, and set aside.  Warm butter and cream together in a sauce pan until
blended. In a separate bowl add the remaining ingredients to the beaten egg.  Blend the egg mixture into the
butter & cream sauce, and gradually increase heat while stirring until the mixture thickens.  Add the warm
dressing to the greens and toss gently. Add crumbled eggs before tossing.  Done.*

DANDELION  SALAD  

Tired of paying high prices for greens at the supermarket?  Then try this.  The best dandelions can be found
in the Springtime before the yellow blossoms appear, but no matter, just glean the newest leaves.  Do not
pluck from lawns where domesticated pets tend to do their business.  If you elect to include some of the tap
roots, chop them finely.  They are a natural laxative.
